We're staying off-site, and would like to know the best way to reach Wilderness Lodge for a dinner reservation. We are a party of 5, if that matters in the advice.

Yes, we'll have a car.

Wondering about boat service versus other options. And, how long to we allow for the transfer itself, versus driving?
 
Just drive to the lodge and give the security guard your confirmation number for dinner. You can park for 3 hours.
 
You can drive to (and park at) any of the resorts. You don't even need a reservation; loads of people visit the resorts just to explore. As the PP said, they sometimes will give you a time-limited parking pass.

To get to WL, follow the signs to the Magic Kingdom. As you're approaching the MK toll plaza, try to get into a lane towards the far right. Tell them you have a dinner reservation at WL and they'll wave you through.

As you're leaving the toll plaza, you'll see an exit to the far right, with a sign for the Magic Kingdom Resort Area. Take this road up to the next light, and make a right. That's the entrance to WL.
 
You asked about boat access. There is a launch from MK to Wilderness Lodge that leaves about every 20 minutes. My personal favorite trip in the World. If you're at MK for the day, you're all set.
