OP here! Thanks for all of the advice!
Since I posted this my DS4 has become adamant we do the nighttime show....and dh would like to see it as well. So.....we are currently booked to do either just the dessert party or the Star Wars tour which includes the dessert party. Still debating on that decision. I am leaning towards the tour so that we will have a stress free day and my kids have a better chance of being awake for the fireworks. We will sleep in, only use our three FP+ (so no waiting in lines), have a table service lunch and then do the tour. I think they will make it up doing it this way, and we have a no parks day the following day to sleep in. We will also go a second morning only to use fastpass and shop a bit, see the IJ show which we won't be able to fit in on the tour day. If they were a bit older we'd try to cram it all in one day, but I just don't think they can do it. Okay, I think I just convinced myself that the tour is the way to go...thanks . They really aren't good at standing in one spot waiting for something to start....lines at least move and there are things to look at.....the just standing is really hard. So the tour will eliminate our "standing time".
