Spring Pantry Challenge

So I've been baking today. I just took some pumpkin muffins out of the oven. That used up the vegatable oil, a can of pumpkin, half a bag of slivered almonds and half a bag of white chocolate chips. I didn't have enough oil so I used up the rest of my homemade applesauce from the freezer. It made them a little more healthy anyway. I know they sound weird, but they're really good. My two year old is on her second one right now. right now I have some banana bread in the oven which used up some bananas from the freezer ans some questionable sour cream from the fridge. If I still have the energy I may finish off some cookie dough I have in the fridge and make some white chocolate macadamia nut cookies.

I TOTALLY sub applesauce for oil in all muffins, quick breads, cakes & brownies. They are SO moist--an MUCH better for you! (doesn't work for cookies) I also sub baking Splenda for 1/3 or so of the sugar. Not as budget friendly, but better for the waistline. (it has an aftertaste if I sub more)

We have been snowed in for 3 days. I have to go out for some appts today...but we are cleaning things out this week!
 
Last night I stopped at the store to scour the discounted meat section hoping to find some fish since we are out. It is usually hit or miss what might be there. Yesterday was a good score. For $13.99 I got 3 salmon filets, 1 larger salmon filet with lobster and crab stuffing, 2 tilapia filets with lobster and crab stuffing, a breaded chicken fried steak, and garlic and cheese sausage.

So...ds had the breaded chicken steak, banana and yogurt and dh and I had the tilapia, rice and carrots.

Preciously planned casserole gets moved to today -again.

yesterday the kids were sick. so no dinner just toast.

Well, I did not make it without going to the store this week. Publix was having a good sale on some things I like to stock, so I went by. Only spent $40, but still not exactly eating out of the pantry.

Wed - finally had the rest of those fishsticks, mashed potatoes and corn.
Thurs - shrimp and grits and a salad
Fri - snow/ice here, so I am home today. Biscuits for breakfast, frozen meals for lunch and we are having a frozen pizza for dinner, per DH's request. I have some Crispix mix in the oven now to use to that, the nuts and pretzels.

Today was another pasta dish. Later this week I'll be defrosting some beef, and either make stroganoff or chili in the slow cooker. Haven't decided yet, I'm hungry for both. I may cut it in half and make a small amount of each.

Last night my dh brought home some chicken noodle soup that a friend of his made, so we'll have pork chops and mashed potatoes and green beans tonight. We did have grilled cheeses with the soup and finished off a package of american singles so we were still using things up.

Could you please share your pumpkin muffin recipe?

I have all those ingredients I need to use up....I'm doing an inventory right now and going put it all (just the cupboards tonight) on the word and print it out real big on the fronts of the cupboards where those particular items are. Good lord... I am not the one who bought 6 bottles of ketchup, and 4 big jugs of canola/vegetable oil because they are too lazy to bend down to the cupboard. Also a spectacular vat of popcorn kernels that 3 years later they have not used up. Grrrr.

Another really cold day here today, so I'll probably do some more baking. Maybe some bread to go with dinner tonight.

Breakfast is muffins or banana bread from yesterday.

Lunch left over veggies from last night. Probably a peanut butter sandwich for my dd. She's on pb kick lately.

For dinner I'm thinking of making potato soup tonight. It's so cold I think that will really hit the spot.

You guys are motivating me to....bake... Wow haven't done that in Years. I did make some split pea with ham in the crockpot today with marked down Honeybaked Ham and good lord that was sooo good.
 
I have some squash I got from Costco that I need to use up and have unearthed a ready made quart containerof butternut squash soup from the cupboard tonight. I was wondering if it would turn out allright if I just put the whole mess in the crockpot a good 4-5 hours? Or maybe longer. I dunno any suggestions would be kind.
Also I have mucho grande quick cooking oats. I made the instant in the crockpot once before with added dried fruit and chopped nuts and a lot of water but I had swine flu at the time and was fearless and delirious at the same time. Turned out pretty good but I don't know about leaving it in overnight. I think I left it in about 3 hours that time but couldn't be sure. I'm a breakfast eater-- which means I eat when I get up, so starting it and waiting for a few hours is out of the question for me. I'm thinking if I just sprayed the crockpot, used lots of water and filled the pot pretty full, I'd be allright. Well, and had 19 year old son start the crockpot before he goes to bed around 2 am or so....:upsidedow

I use the store to pre-make our oatmeal, put in the fridge and it stays for at least a week. I then re-heat by adding a small amount of milk, stirring and putting in the microwave for 1-2 minutes.


Here is my recipe:

1 3/4 cups water
1 3/4 cups 1%milk
2cups oats

4-5 apples depending on size, core, peel, cube. Put a small amount of lemon juice in the bottom of a sauce pan, put in apples, place as much cinammon as you use on top. Heat on medium. As is starts to soften, use a potato masher and mash til chunky. When done, turn off heat and drop on top brown sugar depending on how sweet you like your oatmeal. I use approximately 1/3 cup, my kids like it sweet. The sugar will melt as you are cooking the oatmeal.

Bring the water/milk to a low rolling boil. Add oatmeal. Cook to the a little before the consistancy you like. 7 minutes here for regular oatmeal (not instant). When done to your liking, add apples, cool, refrigerate. This is good for around 8 bowls oatmeal.
 
Never did a Saturday meal plan, but DD has to work and DS is intense into his Xbox, so we are doing left-overs. I will make a new meal plan tomorrow after shopping.
 
I never really thought about making a bunch then re-heating it daily. Good idea.

Snowed in still around here. We had a big breakfast with some homemade bread, eggs and bacon. Using up that pork and of course eggs from the chickens.

Lunch was little wieners wrapped in crescent rolls. I had some little wieners left over from New Years appetizers. Sliced up some apples and glasses of milk. Kids thought that it was a party.

Dinner will be leftover Roast chicken from last night. I may make it into a Chicken Tortilla bake sort of thing using up the chicken, half a jar of salsa and some black beans and some fresh tomatoes out of the veggie drawer. Almost went out to eat today using a gift card but it is so miserable out there I just figured we should save it for a nice day, not one you have to wear hip waders to get anywhere.

I would love your banana bread or banana muffin recipies! Low-fat, full-fat, nuts, no nuts...any of them! :)
 
My banana bread recipe is extremely easy, call it a drop and bake...

Preheat oven to 350degrees, grease/spray one loaf pan

3 ripe bananas
1 stick margarine/butter
2 eggs
1 cup sugar
1/2 cup sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda

In bowl, cream bananas, margarine, sugar, sour cream. Add eggs one at a time, then add vanilla. Mix 1 cup flour then 1 tsp. baking soda. Finish mixing in last cup of flour.

Put the entire mix into the loaf pan (it will fit to the top)

Bake for 50-75 minutes or until a toothpick comes out clean. Enjoy.

Tinker'n'Fun - thanks for the recipe. That looks easy and I'm getting tired of the recipe I've been using.

Dinner tonight was turkey & noodles from the freezer and threw in a half bag of froz peas to finish it out.

Need to do some baking or big breakfast tomorrow as I have 18 eggs to use up this month. Dinner tomorrow will be at MILs.

Was very good at the store today too. Only picked up milk, bread, apples, strawberries, onions, yogurt and froz pizza (they were on too good of a sale to pass up). Spent less than $20 too so it was a good day.
