I've read that some people choose to stay at two different hotels while at disney... has anyone ever done this?

Yes we did it in november 06'.We stayed at pop for a week then moved to CBR.I am glad we did it that way round.I loved pop but lover CBR even more.Disney will transfer your luggage for you as well .Its agood way to get an insight into different resorts without bursting the bank.

Hubby wants to do shades of green for 5 days, then an AKV for the rest of the time to cut down on the cost. BUT I don't think that disney will transport us to and from SoG, or our luggage.

We did it this last trip. The actual check-out/check-in process is pretty painless and Disney moves your luggage for you, but I would NEVER, EVER do it again.

I still had to unpack when we got to the first hotel and take the time to pack up when it was time to move to the next. Then I had to unpack again and repack when it was time to go home. We're a family of 5 and that's a lot of packing and unpacking. I found it to be a PIA!

DH and I decided that it is better to just settle and use the next resort for the next time around. He didn't even do the packing, but just when you get used to everything, it's time to move and start over. It also made our Disney trip just seem so much shorter. Kiddos didn't like it any either.

And our trips our 10 days, it's not like we spending one or two nights in each hotel. Just not worth it *for us*.

The last time we went a little bit over the top though and stayed at 4 different hotels. It is so easy though. You just have bell services move your luggage around and check-in whenever is convenient for you.
Last year we stayed at Coronado Springs, then ASSports, then Wilderness Lodge and finished at Polynesian. Just make sure you always go up a hotel category rather than down. Going to Sports after Coronado was a mistake!
This year we will be staying at one resort for the whole trip though as with 4 children now it is getting harder to pack/unpack.
