I have two resort reservations, 3 nights CL POLY, then 5 nights CR.

I seem to remember reading here that if I have a split stay, that I can only make ADR's starting at the 180 day mark for the first stay, then when the 180 mark hits for the second stay I can make the remainder of my reservations. Am I correct, or can I start making ADR's on the 180 day mark of my first reservation for up to 10 days?

Yep, you'll have two different days to call in. At least you thought of it, I didn't realize it until I was on the phone making ADR.

You might be able to book for the whole trip on the first ADR date. I made ADRs in December for a 6 night June trip. Our reservation at CR is for 6 nights but we were considering extending so I made an ADR for the 7th day just in case and the system allowed it. Anyone else have experience with this? I know the system has undergone a lot of changes recently but my impression is that what matters is that your window opens 180 prior to your arrival day and not how long you'll be staying.
