Split stay FP question

We are doing OKW for 5 nights followed by 5 nights at Kidani and have APs. We can book for the full 10 night stay starting 60 days from our arrival day right?
When we leave Kidani, we will be staying in Kissimee for 10 more nights and might go back to Disney for 3 or 4 days. Can we get FPs for those 3 or 4 days at the 30 day window?
What I find confusing is the "7 day rule". If we can only hold FPs for 7 days, does that mean we cant book our off-site passes until we have used some of our on-site FPs?

You can book the FP for your onsite stay all at 60 days. But you won't be able to book any additional days for offsite stays until you use some of the already booked FP.
