Split discounts for stay

When we are thinking of going down in the fall, last year, there were 2 different discounts. One of them expired right in the middle of our dates and then another one started the next day. Is there a way to book a room without having to do 2 different reservations and having to move to another room in the middle of your vacation?

No. You will have to make two reservations and if they are the same room category, ask to stay in the same room. But there is no way to do what you are describing as a single reservation.

If both reservations are the same room type at the same resort, you could very well get lucky and not have to be moved, especially if you bring this up at your first check in. There would be no guarantees, though.
