Yesterday, my Dad who is 85, asked me for a recipe for cooked spinach and bacon. He said his Mother used to make it but since my huuby doesn't like cooked spinach I don't make it. I seem to remember my Mom making this dish, but I don't have a clue. Can anyone help me make and elderly gentleman happy?
 
Here is something. I'm sure you can adapt it.

Fried Spinach

1 (12 fluid ounce) can spinach, drained
1 egg
1/4 cup milk
1 tablespoon bacon bits

1 Place spinach in a large skillet.
2 Whisk egg, milk and bacon bits together in a small bowl, then pour mixture into the skillet with spinach. Cook over a medium-low heat; stirring frequently until most of the moisture is absorbed into the spinach. Serve warm.

GULLIVER'S CREAMED SPINACH

Amount Measure Ingredient -- Preparation Method

10 oz Spinach, chopped
-(frozen or fresh)
3 sl Bacon
1 sm Onion
1 t Salt
1/2 t Pepper
3 T Flour
1 1/4 c Milk (we substitute
-a like quantity of
-50/50 Kosher Parve
-creamer and water)

Rinse and chop the spinach. Place the chopped spinach in a heavy skillet,
cover, and steam until wilted, stirring occasionally. There is no need to
add water other than what clings to the leaves from washing. (If you are
using frozen spinach, place over low or medium heat to thaw and allow
excess water to evaporate) Transfer to small bowl and squeeze completely
dry.

Grind bacon and onion very fine and place in saucepan. Saute bacon and
onion until bacon is cooked. Stir in flour to make smooth paste. Gradually
add milk. Bring to boil and simmer 10 minutes over low heat until
thickened.

Add salt and pepper. Grind spinach fine and add to cream sauce.

NOTES:

* Creamed spinach with bacon -- This is a creamed spinach recipe that we
found in the _Los Angeles Times_. It produces a creamed spinach that even
my wife likes.

* You may find that you want to add extra milk and give the finished soup
a final heating in the microwave. We did, and it didn't hurt it one bit.
 
How about if you cooked up some bacon and reserved some of the drippings. Then you could add some chopped shallots and wilt some fresh spinach in the drippings. When I cook spinach (I only use fresh), I sautee a couple of shallots in a little bit of butter or olive oil and when they are cooked, I quickly toss in the spinach leaves. I leave them in just long enough to reduce down but not so they're soggy. Good luck!
 
i just finished eating spinach fried with pancetta and a little onion. it was delicious! next time though i may add a splash of heavy cream...
