Does anyone know what the spice is (other than cinnamon) in the Chicken Bastilla appetizer at Restaurant Marrakesh? My friend and I couldn't figure out what it was. Thought it might be cardamom. The menu on allearsnet just says baked layers of thin pastry stuffed with minced chicken and almonds, sprinkled with cinnamon and powdered sugar.

I don't know, sorry. But they are delicious and I think that there is a savory element to them. I agree that there is something in addition to the cinnamon and sugar. Good luck!!

Sorry, I don't know, but I think this dish is yummy, too! I hope somebody can help you out!

Thanks for your responses! Guess I'll have to ask the chef next time I go.

I have this wonderful moroccan cookbook and it has the bastilla recipe in it, it lists ingredients for the filling as follows;
chicken, onion, garlic, butter, cinnamon, ground almonds, ground ginger, ras el hanout, saffron threads, flat leaf parsley, fresh coriander (cilantro), eggs, orange flower water, lemon, spring onions, icing sugar.
Ras el hanout is a mixture of about twenty different spices available at North African grocery stores, it is both aromatic and spicy known for its aphrodisiac qualities ;)
