Spending money and must do things

My parents are taking me, my son(who will turn 5 a couple of weeks before going to WDW) and my fiance(first timer age 25) lol. It's my sons and my fiances first time. Since my parents are taking us meals, some snacks, the room and tips are on them(though I am paying for either a breakfast with the characters or a dinner show...but for now don't count that into the count) Anyway we'll be at Disney from October 21-Oct 29 and I am curious as to how much spending money should I bring for the three of us? How much per person do you think is required(baseline...no tips, meals ect included). Also I know for sure I'd like to pick a pearl in Japan what are some other "must do/ must see" things? Wether it's something like a pick a pearl or a ride that just has to be ridden like Space Mountain.
 
As far as rides go...TSM (HS) and Buzz Lightyear (MK) are super fun. Make sure you get FP early in the day!!

Parades, fireworks are a must see!

As far as spending money...considering the meals, snacks, hotel are on them, basically you are looking at shopping money. The parks can be quite expensive, so you can really name your poision here...$500? Depends on how much shopping you think you will do.
