Special Requests?

I have two somewhat different questions about asking for special requests:
1. My Dh and I have ADR's at several places with show kitchens. Do you request to sit there when you check in, or is this something you should ask for when you book?
2. Also, how accomodating are places about substitutions with sides and things?

I do not know the answer to the show kitchen question.
I have found WDW TS restaurants to be very accomodating to substituting side dishes with an entree. As long as it is already on the menu, my request has always been met.
I did ask at the Cantina de San Angel in Mexico (CS) to have a side of beans omitted from my meal and my request was denied. They said they are pre - "plated" and they could not do it.

Thanks! Having read so many dining reviews at this point, I thought that was the case.
 
Hello...just wondering if anyone knows about when to request a particular seat at a TS restaurant...I am particularly interested in knowing how to snag a table at the counter in front of the kitchens, like at Jiko.
