Mike- The Chef will come out to you pre-meal and discuss with you your likes and dislikes- he might make some suggestions. If you like caviar, are a big fan of seafood, or like game meats - now's the time to tell him. I would suggest perusing the menu out front (for the regular diners) which will give you an idea of the the type of stuff they are offering that evening (The Chef can only offer you things he has in house ). If you've never tried something on the menu, and aren't sure if you'd like it- then you might mention that to him - maybe he'll set you up with a little sample. Often we just go and let the Chef pick for us- he's always done well by us!! (Although I always decline the caviar..). Vic and Als fly in the most seasonal and yummy stuff for their meals- so if you are thinking of calling and asking for something that is off-season, then you might be doing your taste buds a diservice.
