Special Orders

How are the restaurants, both counter and table service, about special orders?

Can we request items be left off (condiments), placed on the side (dressings and sauces) or substitute with another menu item (green beans instead of southern greens)?

Most places seem to be pretty good with substitutions.

I've heard that Flame Tree BBQ will not make any substitutions and I have personal experience that Cantina de San Angel is HORRIBLE. I ordered my nachos without beans. Was told that they were on the side and that they couldn't change that. I accepted this, got my nachos and discovered that the 'side' they referred to was the TOP side. They were totally saturated in beans and completely inedible for me.
