Special last night?

I need some advice. We are unexpectantly extending our trip by one evening. We now plan to spend our last day relaxing by the pool at the BCV (Saturday). We have APs so we can eat anywhere. We will not have a car and are traveling with DDs 2 and 4. My best friend will be with us on this trip who does not get to travel often so we would like to end the trip with a special evening. Any suggestions, somthing really fun? I have listed what we already have planned while she is there.

For me dining at CRT is always a special event. It is just so magical. If you are able to get a PS to be dining during or after sunset the view of Fantasyland is wonderful.
