Special chef preparation at buffets for special diet

I have IBS and my family will be eating at 1900 Park Fare for the buffet dinner and I don't feel comfortable trying to eat at the buffet and risk getting sick before we attend the Mickey Christmas Party.

Someone mentioned that the chef could make me a special meal with my dietary restrictions in mind. What would be my choices and would they charge the same as the buffet price? I'm confused on how that works. I'm mainly concerned about the meats b/c they tend to cook meats too greasy and oily for me to handle it. I didn't want to pay the buffet price and only get like one or two things I could eat because that wouldn't be worth it at all. I'm also considering just eating something quick and easy before or after my family eats dinner.

Also I booked a ADR for 4. If I get there and decide I can't risk eating would they only charge us for the 3 that do end up eating.

Any insight would be greatly appreciated ;)

Thanks that answered all my questions ;) I'm still working with doctors to see what all my restrictions are since I might also have gallbladder disease which limits fat, oil, grease, butter that the food is cooked in but worst case scenario would be that I could just ask them to grill a piece of chicken or fish without any sauce that they seem to have listed on the buffet menu items and then I could eat salad and shrimp and soup to round out the meal. That way I get to still eat with my family ;)

Thank you for taking the time to answer all my questions. I just got diagnosed and I was really stressing over how to eat with these restrictions while at Disney since I get sick almost everytime I eat out. The buffet had me most concerned because in a table service restaurant you can be specific with your order versus a buffet where the food is already prepared. Thanks to these forums I can find out this information ahead of time to be as prepared as I can!!

1) I have a daughter that had a gallbladder issue.
2) Before it was pulled out, greasy and fatty food caused a flare up.
3) As you mentioned, ask for some grilled chicken.
4) Then, get other things from the buffet - of course no fats or nuts.
 

The Chefs at 1900 Park Fare are among the best in the World for creating specialized meals. My son is allergic to wheat, milk, eggs, beef and shrimp, and at the time he was a very picky 2 year old eater. We were there for the breakfast buffet and I was really worried about what he would eat there. When we got there, the chef came out to our table and asked about my son's allergies. I explained them and he said that he could make him a very yummy pancake breakfast. I told him that he had never had pancakes and I wasn't sure that he would eat them. The chef convinced me to give it a try and my son LOVED them. The chef came out to see if he had eaten, and he saw that he had cleaned his plate. I was so relieved that he had liked them and thrilled that he had eaten pancakes for the first time. The chef wrote out the recipe for me, and even showed me the package for the egg replacer that he had used. He gave me an entire lesson about cooking without eggs and wheat. We still make him the 1900 Park Fare pancakes, and he still loves them.

My mom has food allergies and the chefs at the restaurants were very accomodating. We had breakfast at Park Fare and they made her eggs and waffles and it seems like something else but I'm not sure what it would be. At a different buffet dinner, they made her chicken, a baked potato and steamed green beans. Just ask for the chef, they will have something that they can make for you.
 
These comments are very comforting. It is so nice that they are so accommodating at Disney. You have no idea how much I was stressing over the food issue but I guess when traveling with health problems the best place to be is disney ;)

Call me a sappy person, but that story made me tear up. I love, love the fact that the Chef took the time to give you recipe and a little lesson on cooking without eggs and wheat. We are eating at 1900 PF for breakfast on 12/9 and if I knew his name, I would thank him in person!:lovestruc

That is a wonderful story! I also can't have wheat or egg so pancakes are very difficult to come by for me. WDW really does go above and beyond in helping us all eat well.

Personal choice? Not really. Those afflicted in this way (and I'm including one of my daughters, so this is not something I just "heard of") have little tolerance for overly greasy foods. Unfortunately, you can't always tell by just looking at it. And the end result is many urgent trips to the WC, plus a lot of physical discomfort, so I can see why the OP is concerned.
