Spain and Italy Travel after EBTA questions.

Covid testing question for Spain to Italy to USA. After our EBTA to Barcelona on May 21. We stay 3 nights in Barcelona then fly to Italy. Then on May 29 fly from Italy to the US.
Can anyone tell me what is required for us to fly from Spain to Italy and later from Italy to the US?
I’m not sure if I need to get appointments in foreign countries to test and fly. And where/how do I make that appointment if it’s needed?
I am about to pay AAA for our after cruise adventures but I’m afraid I’m not well informed enough to pull the trigger on this trip.

The European requirements however are starting to relax so may change but I don't know when the US ones are likely to
