Southwestern Stroganoff

Ingredients:

1 lb ground beef ( I use ground turkey)

2 cups sour cream

1 & 1/2 cup salsa

1 tsp chili powder

1 tsp cilantro

1 cup water (have more handy for the pan)

Wagon wheel pasta (I use penne)


Directions:

Brown the ground beef and drain.

Add salsa and water

add pasta

add cilantro and chili powder

Simmer pasta, beef, salsa and water together for approx 15 minutes or until past is done. Check from time to time to make sure the pan doesn't get too dry. If it does, add watter (a little at a time).

When pasta is done, add the sour cream, and heat through.

NOTE: Adjust the chili powder as you see fit.

I made this last night and it was great... give it a try, it only takes about 20 minutes from start to finish.

This will be a good one for me to make for Dh and myself. I love stroganoff and he loves southwestern flavors. Thanks for sharing it!
