Southwest questions

We almost exclusively fly SW and have flown with 1 child before, but never to Orlando (once from) and never with 3 kids. We are going to be 3 adults and 3 kids. We have no intention of sitting together, just planning on having 1 adult with 1 kid and that being ok.
Obviously since we are flying to Disney and there will be lots of families, things work a little different. We were planning on using family boarding, but I have now heard that it can sometimes be cancelled or ages altered based on the group. Our kids will be 6, 3, and 2 at the time of the flight. We do not have EBCI, and our flight is late next month. They are both non stops and we are going out of an airport where it is highly unlikely it is a connecting flight from somewhere else.
I am debating getting EBCI for my mom and my oldest son just in case they alter the ages. But since we have two 3 and under, he would get to board with us still regardless, correct? If I just got my mom the EBCI and she was in the A group (not likely since I'm purchasing it so close to the trip), could she choose to "forgo" her spot and board with us since it's after the A group so she can help load up "her" assigned kid for the trip, or would we just have to meet her on board?
In all reality, even if there wasn't family boarding, I'm guessing there is still a pretty good chance we would get at least 2 seats together, correct? I don't want to overthink it since we don't need much, relatively speaking, just a few sets of seats together.
And I know people will just say "you should buy the EBCI", but I'm not worried enough to care enough to spend an addition $225 on the trip, our 6 year old could easily sit by himself with an adult in the vicinity and our 3 year old could too, in a pinch, just not ideal.

Meant to say too, we are flying in on a Thursday evening, so not as popular of a flight, but flying out a Sunday night, which obviously would be more so.

With checking in right at 24 hr mark, we have always gotten end of A/beginning of B, and have never had a problem getting 2 seats together. We usually sit 2 and 2(1 with each kid) and sit behind the other pair. I think if you can check in right at 24 hrs so you should have a good spot on line in case family boarding doesnt work out, and then make sure to get to airport early, to clear security and be at the terminal in plenty of time. Then you can ask about family boarding to make sure so you know what will work before you are lining up . However, from what I have read, the policy is 6 and under, so you should be fine. And who knows, maybe you will get group A and board before family boarding!
