Have you looked at the menus for all these places (you can find them on allears.net)? That might be a good way to narrow down what really appeals to you. By broadening your horizons do you mean adventurous eating or just eating outside of your habitual choices? DLR has places that can meet either of those requirements for you. Right now, based, on your list, my take is: Catal (requesting a table upstairs with a view of the fireworks, if you can dine that late), WCT lunch for a WOC dining package (not adventurous or stellar, but adequate and a WOC FP to boot!), Cafe Orleans for the Monte Cristo and good people watching, Steakhouse 55 breakfast is very fun (but would only broaden your horizons if you really don't eat at nicer places for breakfast very often). Hope this helps narrow things down. Depending on the budget, Napa Rose (CA wine country style menu) could broaden your horizons. Carthay Circle might be fun, too, and offers the option for WOC dining packages for lunch and dinner.
