I would love to eat at Garden Grill, Liberty Tree Tavern, or maybe 'Ohana for breakfast (Stitch lover here ), but I am wondering if it might be too strange to be dining alone at this type of restaurant.
I have eaten solo at virtually every restaurant in the parks, and have always had a good time. Don't even give it a seconds thought and go have a blast.
I find trying to make conversation with strangers while eating mortifyingly awkward..it happened several times at CS tables when I had to share. Needless to say I avoided the family-style dining...it's not for me. But if you're an outgoing person I'm sure it would be fine!
Biergarten and Teppan Edo are the only locations where they will sit you with others. In all other situations you will get your own table (usually a two-top or four-top). If it is a served all-you-can-eat (such as Garden Grille or dinner at Liberty Tree Tavern or the Skillet at Whispering Canyon) the initial serving will be done as a single plate, and you can order refills of any or all as you desire.

Are you seated by yourself at character breakfasts or dinners, like Tusker House or Chef Mickey's, or with others? And do the characters stop by your table just the same way they would if you were with a group and/or children?

You get your own table. And the characters will treat your table just the same as others. You may need to ask a CM or a neighboring table to help take pictures.
I ate solo one time at Liberty Tree Tavern (husband came down later) and it was a wonderful experience. The waiter was sooo nice and felt like I got more attention than when I ate there with spouse. Enjoy!!!

I always travel solo and have been at every Disney park in the world. Eating solo happens more often than you think. It is easier to start a conversation, with the people around you and with CM's. CM usually give you some extra attention. They will help you with photos if you ask them, also if you go to a character meal. It is also some extra time for myself. Since wifi has come to the parks and the resort, it gives me some time to check my messages or the news. Also I am planning the next part of my stay.
Traveling alone also makes you more aware of your surroundings. You see more than when you are traveling with others, because you are not distracted by them. So you spot hidden mickeys easier and things like that.
Just have fun. That is why you are there.

Just an FYI, it can be difficult to book 'Ohana breakfast for 1. I had to book it and Akershus by reserving for a party of 2 online and then calling to have the party size adjusted to 1.
Went to Liberty Tree Tavern on my own and had a great time. Still have time with all the characters. Either the staff or other guests will gladly take pics for u. Any other questions just ask
