Like all the other posters said - Soarin' - and ask to sit in a low (off the ground) row. Most people ask for the high rows, so I'm sure they will be happy to accomodate you.
I have a SUPER nervous 7 year old. Refuses to ride anything that event remotely goes fast (TTA was good, but she hated the dark part). She will now do Test Track, and likes it, but makes me bring her soundproof headphones for parts of it. On the other hand, she has loved Soarin' since the beginning.
It is very calm, very pretty music, very relaxing - nothing jarring or "scary" - I think it is one of the nicest rides in the parks.

At least on Test Track they are in a ride vehicle and they may seem more comfortable in a car sitting in the middle of two adults.
