I had always served the noodles and sauce separately, but then a couple months ago we ate dinner with my dad and step-mom and she served hers mixed. DH decided he liked it better that way, so I have been serving them mixed. It really doesn't matter that much to me. We eat spaghetti a lot - that is my go to, busy night dinner.

If it's a non-red sauce--alfredo, pesto, garlic and olive oil, etc. I'll mix it in. Any tomato-based sauce, i'll spoon on top.

We had spaghetti tonight. Before we lived together DW used to mix the sauce and pasta together before serving. I grew up always just putting the sauce on top. Now she does it my way because I'm the boss. :duck:

I’m not a big fan of sauce and neither is my son so we leave ours separate. My husband would just mix it all together if he had a choice.

Separate bowls for pasta and for sauce here because there are several pasta only eaters in the family (well, pasta and parmesan usually). DH mixes his in, along with any veggies we may be having (yuck!). I generally have my sauce on the side so I can dip some pasta and have some plain.

I grew up with it mixed but DH requested on top so I do that. DD16 eats it plain or with cottage cheese mixed in so she appreciates having the sauce not mixed in already.

Mom always mixed spaghetti sauce (homemade) in with the spaghetti noodles, only she didn't use spaghetti noodles. She used vermicelli. Italian godmother put her homemade sauce on top. She also used vermicelli.

DH's family used the box mix or jar spaghetti sauce. I do not allow that in my house. (No offense to those who like box mix spaghetti sauce or jar spaghetti sauce. My Godmother is Italian.) His family always put the sauce on top.

DN came to our house and told me he didn't eat spaghetti. He loves mine! Turns out, he doesn't like thick noodles. (OK, so we're slowly working him up to linguine.) DS only eats plain spaghetti (vermicelli) with butter and freshly grated Parmesan. Somedays, he'll let me add a little sauce ... :rolleyes1

Noodles with sauce I prefer to serve the sauce on top. But if I’m making a casserole pasta I mix the sauce with the pasta then put it in a pan and layer with cheese. If it looks dry I’ll add some sauce on top.

LOL. My wife makes an amazing spaghetti sauce from scratch, but we have discovered those Newman's Own jarred sauces are pretty amazing too.

Good to know! I'm a huge fan of his mango salsa. I put that stuff on my burgers instead of catsup.

I mix it in and add pasta water because that's what all the cooking shows say to do. Growing up, my mom always served it on top.
That's how it's done in restaurants too; the pasta is cooked just al dente and the sauce is warmed in a skillet-type pan. The pasta goes into the sauce and simmers together for a minute or so.

::yes:: The homemade sauce'rs might shame me but I couldn't possibly make a better one myself than Sockerooni and the ingredients alone would cost 3x what a jar of it does. We are a small family and only need a little at a time. It's absolutely perfect.

The 500 mg of sodium is the only downside to Newman's own. My wife's homemade sauce is heavy on herbs and has no added salt. The tomato paste does have 100 mg of sodium though.

I crave sodium. I ride a bicycle and drink up to 3.5 gallons of fluids when riding. I eat all the salt I can.

I don't get the pasta water poured back in (little amounts I understand.) That just makes watery spaghetti.

Mix it in for leftovers and you have dry pasta with no sauce for leftovers.

I mix a little sauce into the spaghetti, but use more when getting a plate. I keep the sauce and noodles separate for leftovers for work. That way there is some sauce on the spaghetti and not the liquid absorbed and left with just dry noodles.

You're lucky on the sodium. We don't even have a salt shaker on the table and my Doctor yells at me to cut out the salt. Of course in my blood work my sodium is at the very bottom of the safe level. I don't know exactly how much water I drink a day, but my Doctor has me on Potassium pills because my potassium is always low and told me to cut back on the water.

100% Italian with relatives still living in Italy and it's always always mixed in. And always homemade sauce, no jar sauce, yuck.

My Grandparents and Aunts always made home made noodles, talk about heaven! We have a pasta machine but have never made them. Someday when we're retired and have more time, I'm sure we'll pull it out and make noodles on special occasions, it's a lot of work, we're too lazy today.

I was all ready to go try some Sockarooni until I saw that it had FENNEL in it. I despise fennel. I spent decades of my life thinking that I hated sausage until I discovered it was the fennel that I hated.

The terminology different people use is interesting. Here it’s sauce, tomato sauce, or gravy, not spaghetti/pizza/pasta sauce. And it’s pasta or macaroni, never noodles. And no one would admit to using jarred sauce, even though everyone has it on hand to use in a pinch. Our local grocery store has an entire aisle with pasta, canned and jarred tomatoes, and various jarred sauces. My SIL moved from here to the Midwest, and always brings her kids to the grocery store here as a field trip.

If I'm using jar sauce I like Victoria's or surprisingly Stop and Shop's Simply Enjoy brand (which recently changed names to something else). Most others that I have tried have added sugar, blech.

And let's not forget the pouch of powdered spaghetti sauce. That is what I grew up with.
