Slow pace, no thrill ride trip suggestions?

I take the kids all the time solo when hubs is deployed and it forces us to take it easy. Since its 3 of them (6,5 &2) we don't do rides except for the slow ones where all four of us can ride without any height restrictions. Some of our most favorite memories were when it was me, 6 months pregnant and the oldest two. We had a blast and it taught us to take it all in at a slower pace. We are going in a few weeks and plan on spending time at Animal Kingdom hitting all the things we usually rush by.
