How about a fishing excursion, parasailing, horseback riding, pony rides, carriage rides, Disney Quest, Beignets at Port Orleans French Quarter, Zebra Domes at AKL, take in the monorail resorts, Beach or Yacht Club never recall which it is for the gingerbread merry go around and Christmas Village Display, Grand Floridian for life size gingerbread house where you can purchase goodies from, take the grand staircase, listen to the orchestra....
Hop over to Pop for the Tie-dye cheesecake
The Harleys at the shop in DTD provide for some interesting photo ops, Pop/Art and the values provide more cool photo ops.

At WL or AKL are great places for a hidden Mickey search, ask at Concierge for the list or buy the book...

Blue Springs State Park in Orange City, about 45 minutes north of Disney, is great that time of year. It's beautiful and the manatees will be there then! It's a really cool chance to see them in the wild. We love it and we always make a trip up there when we are in Florida during the winter months.
