Personally, we would go down to 3 MK days and one AK. 4 MK days is overkill IMO. Sure, it's our fav park, but I wouldn't give up AK to get a 4th go at it.
I think I would honestly just ask the two little ones.
If they've never been to AK though, it might be hard for them to say for sure, in which case I'd make a decision on whether or not they like the types of things offered there -- animals, Lion King, Nemo, Bug's Life, etc.
I love AK and certainly wouldn't want to miss it. I usually spend the full day there. I do rush around and get the headliners - EE and Safari out of the way and then catch some shows and wander the paths. There are so many animals to watch and the theming in the parks is terrific. I find it much more relaxing than MK and DHS. I also like to ride Safari at least twice and preferably 3 times as different animals are out at different times of the day.

Got dinner ADR for Tusker House, as the kids love Donald and Daisy and DH loved Boma, which i hope is similar to TH.
We have been that same week twice and crowds are not bad at all! Personally, 4 days at MK would be way too much for me, 2 is enough if they are pretty full days. And I can't imagine skipping AK, it's probably my favorite. Although really, for a week-long trip, I can't really imagine skipping any if the parks. The experience just wouldn't feel complete.

That's what got me thinking that 3 days in MK is not enough.
But knowing the crowds are manageable, AK is now back in the itinerary!!

we skipped EPCOT the first time, but since DS5 is in junior kindergarten and more aware of other countries, I thought of allotting 2 days.
this trip will be the first time for mom and dad too!
With kids that age EPCOT is tough, well at least the World Showcase is. I know when mine were that age we only did MK and AK, AK is a nice break, it is much more relaxing than the other parks and there is a lot for littles to see and do.

Great choices IMO. Tusker is one of the better buffets on property, and it would be a shame to miss AK, especially since you'll still have 3 days at MK still. Shoot, in our 8 day schedule we only have two full MK days, and maybe a few evenings if we feel like it to see Wishes and stuff. (this is our first year with park hoppers)
A few years ago I would have said the same, but it's growing on us. It was by far our least fav park, but now it's moved up to #3 of 4, with AK last. Still like all the parks though.
Flights of Wonder, Bug's Life, and Nemo are all very nice. Lion King is one of my favorite shows at AK. One note on Bug's Life: if your kids are afraid of Hopper in the film, then you might want to try to find a preview on YouTube to decide if it is too scary. The theater is sort of dark. If you're not sure, you could always sit in the back, a "safe" distance away from the screen.
