Single diner

Looking for a recommendation for my wife who will be at EPCOT for a day before the rest of us join her. She prefers healthy food, and since we are going over Christmas she will need ADR's since she gets flustered with crowds. Any ideas of a good place for her to dine alone for lunch and then dinner?

Sunshine Seasons has an extensive menu for a counter service
Tangierine Cafe can be "healthier"
Les Halles Boulangerie in France
Kringla Bakeri in Norway

Dinner/Table service:
Teppan Edo
Tokyo Dining
or any of the above counter service for greater variety

Lunch right when it opens so easier to get in.
