Shrimp Pasta Recipe

Help - We have a bunch of shrimp and DH wants to make a Shrimp Pasta like Shells or Red Lobster.

Anyone have a site or a recipe to share? :listen:

Basil Shrimp Fettuccine

Amount Measure Ingredient -- Preparation Method

8 ounces uncooked fettuccine
1/2 cup chopped onion
1/4 cup chopped sweet yellow pepper
1/4 cup chopped sweet red pepper
2 garlic cloves -- minced
2 tablespoons olive or canola oil
1/4 cup all-purpose flour
12 ounces evaporated milk
1/2 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper
1 pound uncooked shrimp -- peeled and deveined
2 tablespoons minced fresh basil -- OR
2 teaspoons dried basil

Cook pasta according to package directions.
Meanwhile, in a nonstick skillet, saute the onion, peppers and garlic in oil until tender.
In a small bowl, combine flour and milk until smooth. Add to vegetable mixture.
Stir in seasonings.
Bring to a boil. Cook and stir for 2 minutes or until thickened.
Reduce heat. Add shrimp and basil. Simmer, uncovered, for 3 minutes or until shrimp turn pink.
Drain pasta. Place in large bowl. Add shrimp mixture and toss to coat.

Quick and Easy Shrimp Primavera

Amount Measure Ingredient -- Preparation Method

8 ounces rotini -- uncooked
1/2 cup Zesty Italian dressing
1 pound medium shrimp -- cleaned
1 large red bell pepper -- chopped
1 cup matchstick carrots
1 cup fresh sugar snap peas
2 cloves garlic -- minced
2 tablespoons grated Parmesan cheese
1 teaspoon grated lemon peel

Cook pasta as directed on package.
Meanwhile, heat dressing in large nonstick skillet on medium heat. Add shrimp, vegetables and garlic. Cook and stir 3-4 minutes or until shrimp are pink and vegetables are crisp-tender.
Drain pasta. Toss with shrimp mixture.
Sprinkle with cheese and lemon peel.

This is our favorite pasta dish. Tonight we are having this with shrimp! We make it with either chicken or shrimp. I found this recipe in a Sam's Club buisness member publication, but I have altered the recipe a little for our taste.

Penne a la Vodka

1 pound boneless/skinless chicken breast
1/2 C olive oil
2 tsp Kosher salt
2 Tbsp. minced garlic
1 Red thai chile, seeded and chopped
1/2 tsp black pepper
1 lb penne pasta
3 Tbsp unsalted butter
3 14.5 oz cans diced tomatoes
2 bay leaves
2 Tbsp Vodka
1 Tbsp lemon zest
1/8 C fresh basil


1. Marinate the chicken in olive oil, salt, garlic, chile, and pepper in refrigerator for 1-2 hours.

2. Pull out chicken to place on grill, and grill until done, and then cut into bite size pieces. Pour marinade into a skillet and saute for 4-5 minutes.

3. Add the tomatoes, butter, and bay leaves to the skillet and simmer gently for 5 minutes.

4. Add the vodka and lemon zest, bring to a boil for 1 minute.

5. Remove from the heat, add basil and set aside for 3-4 minutes.

6. Add the drained, cooked pasta, and the grilled chicken.

7. Top with Romano or Parmesean cheese (optional) and serve.

That also sounds very good. Printing it off for maybe this weekend. :thumbsup2
 
DH fell in love with the seafood pasta from Shells! The problem was that we lived in Chicago at the time and only got to Florida once a year or so. :sad2:

So, he wrote to Shells and asked for the recipe! We haven't made it for years, but I dug it out and we'll probably be having it for dinner in the near future. BTW, we always use a mixture of whatever seafood is easily available -- we're not as crazy about mussels and clams as we are shrimp, scallops, and crab, so we use those instead!


Seafood Pasta at Home (from Shells)
serves 4 people

Pasta:

1 lb. linguine
1 oz. butter
salt

Seafood Mix

4 oz. mussel meat
6 oz. Chopped Clams (cooked & drained)
10 oz. Raw Scallops
12 oz. Peeled Raw Shrimp

Sauce

4 oz. Olive Oil
4 oz. Dry Cooking Wine
8 cloves of Fresh Garlic -- finely chopped
Salt & Pepper
2 Dashes Soy Sauce
16 oz. Heavy Cream

Preparation

Cook linguine in salt water with butter until al dente; drain and set aside.

Combine sauce ingredients in a sauce pan and bring to a boil. Add cooked linguine and drained seafood mix.

Stir gently, approximately 10 minutes, or until seafood is done and dish has a creamy consistency.

Serve immediately!!
