should we do the dining plan???

We are 4 adults traveling with 2 kids, but 1 is under 3, so we only pay for DS6. We have ressies for CP breakfast, Tusker House breakfast, Mickey's Backyard BBQ, Chef Mickey dinner, WCC dinner, a HS fantasmic dinner (not booked yet), and Epcot dinner (not booked yet). Or should we pay out of pocket since we are doing 2 breakfasts and a 2 credit dinner? If we do not do the dining plan, I may be able to convince my mom to do a split stay and leave a day earlier to have a MK day on our first full or last day there!!!!! I am not sure she really wants to spend an extra day or do a split, but maybe!
