Short trip need advice

We will be in Disney during the "pop warner" week. Due to family events we only have Tuesday and Wednesday to visit the parks. Also due to theses events it is just me with my 10yr old and 1 yr old. I possibly may have a friend and her daughter along for the 2 days

I'm lost! If my friend comes, is there a way to go on a ride with my 10 yr old while the friend holds the baby? And then she goes on the ride with her daughter before or after?

We plan on doing MK and maybe Epcot. It's my kids first time there, but we are planning a family vacation including my husband and son for next year.

What recommendations do you have to make this short 2 day event fun and memorable?

Yes! Tell the CM at the ride and they will make the necessary adjustments so you and your friend plus children can do the switch.

Look up rider swap or child swap. It will allow you to do what you are describing
