Okay, let's see what we can do:
Airfare? Probably can still get it. Check expedia, travelocity, continental, American, and if it goes there, Southwest. Those are where I tend to find the best prices on air.
Hotels... yes. Try Candy Cane Inn or Best Western Park Place. There's no shuttle from Park Place, but that's because you don't need one. It's less than a 5 minute walk to the turnstiles. All you do is cross the street and you're at the shuttle pick up and drop off point for most hotels.
I've also been content with Best Western Anaheim Inn, though I'm not sure of their breakfast option. Park Place gives you vouchers for the mom-and-pop style restaurant next door.
I've heard the breakfasts at I think it was Desert Inn and Suites is pathetic, and I've heard mixed reviews at Carousel. AVOID Castle Inn and Suites.
Again, check Expedia for hotel prices. I got
Disneyland Hotel on Expedia for $110, and found almost the best prices for the rest of the hotels there as well. Candy Cane Inn isn't on Expedia, though.
There's another website that offers really cheap hotel prices -- I forget the address, but I know it is/was listed at mousesavers.com
Tickets -- get thee to the Disneyland website ticket purchasing area. You'll be going during their 5 days for the price of 3 promotion. If I'm not mistaken, you have to order the tickets online to get that promotion. It's the best deal out there right now (at least the best I could find). If you order a package, you can also get 6 days for the price of 4 if I'm not mistaken, but that's only available through a package I believe.
As for package or not... I tend to choose not, but that really depends on where you're going to stay.
I found that in my case (and only in my case, this really changes per person), I could get a combination of hotel room, park tickets, and meal for less by myself than I could through a package. We weren't interested in most of the other "special features" the package provided, so for us it was going to cost something like $150 more just for a character breakfast, two fastpasses, and a couple of pins. That wasn't worth it for us.
Others have found the packages to be an excellent deal. You really have to price things out on your own to find out whether it will be good for you or not. Packages are certainly the most convenient way of booking a trip since everything is included except the airfare and car rental (and I think a package can do the air, too, can't it? Though you won't get the best deal)
No help for you really on cars. We tend to go with National, but they're not always the best deal. We just like them.
Meals... in most of the places at Disneyland, I typically budget $10/person for lunch, not counting drinks. I think you can get lunch for less than that in some of the restaurants, but I've found for our party (just 2 adults) that pretty much averages things out. If you want to include sodas/water through the day and a snack, I'd go for more like $20/person/day. If you figure that much, you should be able to do it for less and not be surprised.
