With winter in full swing, I thought it be nice to post crock-pot or slow cooker recipes. I'll start!

Worlds Easiest Roast

1 roast (beef or pork, any size)
1 packet dry onion soup mix
1 package sliced fresh mushrooms (or buy 'em whole and slice yourself, but I'm lazy)
1 can condensed cream of mushroom soup

Place roast in crock pot, add dry soup, mushrooms, and canned soup. Cook on low for 4 to 8 hours, depending on size of roast. I often add potatoes to the pot when making this roast, saves the trouble of roasting them in the oven latter.

I made this the other day - except I didn't add fresh mushrooms. It was sooo good! The next day I put the leftovers and gravy back in the crock pot, shredded the meat, added a little bit of sour cream and some ground pepper and poured it over egg noodles. Sort of like stroganoff. It was SOOOOO good!!
 
my MIL makes that too...minus the sliced mushrooms though. It's one of DH's favorite dinners. I was just looking for a good chicken in the crock pot recipe this morning, but couldn't find any. I had a package of whole chicken breasts that I wanted to cook today, so I decided to wing it. I put them in the crock pot with some potatoes, about 3 cups of chicken broth, cut up celery and a package of Good Seasonings dry italian dressing mix. I'll let you know how it comes out.
 
Very tasty and so easy:

Easy Crock Pot Beef Stew

1 lb. stew meat
1 bag baby carrots
3-4 potatoes peeled and cut into chunks
2 cans cream of celery soup
2 cans French onion soup

Dump all ingredients into the crock pot. Season to taste.
Cook all day, stirring occasionally

I have an easy one in the crockpot right now - can't wait to get home to it:

Salsa Chicken:

3-4 chicken breasts
1 large jar of salsa
one can of pinepapple (chunks or if have rings, cut them up)
butter to cook

put in the chicken and butter. have the chicken and butter cook until chicken is white on outside.

add the salsa and pineapple.

cook on low for 6-8 hours

once fully cooked, break up the chicken.

serve over rice.

Three other ones I love:

Pork and Apples:

4-6 boneless porkchops
7-8 apples, peeled and cut up
cinnamon
butter

layer butter, apples, pork chops (2 at a time) and cinnamon until done.

cook for 6-8 hours on low.

Creamy Italian Chicken

2 lbs. boneless, skinless chicken breasts
1/4 cup butter or margarine, melted
4 oz. of and 8 oz. tub of cream cheese and chives
1 (10 3/4 oz.) can golden cream of mushroom soup
1 (0.7 oz.) pkg. Italian dressing mix (this is the dry mix)
1/2 cup water or white wine
Angel hair pasta

Cut chicken breasts into strips and put chicken strips into slow cooker.
In a separate bowl, mix melted butter or margarine, cream cheese soup and Italian dressing mix together.
Pour mixture over chicken strips and add in white wine or water.
Cook on LOW for 6-8 hours.
Serve over cooked angel hair pasta.

CROCKPOT ROAST STICKY CHICKEN

4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1 tsp white pepper
1/2 tsp garlic powder
1/2 tsp black pepper
1 large roasting chicken
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well
and pat dry with paper towels. Rub the spice
mixture into the
chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a
resealable plastic bag, seal and refrigerate
overnight.

When ready to cook chicken put the onions into the cavity, put the bird into the crockpot and do not
add any liquid. As the cooking process goes on it will
produce it's
own juices. Cook on low 8 to 10 hours and it will be falling off the bone tender.

Curry Chicken

4 large chicken breasts
one can chick peas
peanuts to your liking (unsalted)
two cans coconut milk (I use lowfat)
peanut sauce to taste
red curry powder to taste

put chicken in crockpot with stick of butter
when chicken gets white, add everything else
slow cook for 6-8 hours

break up chicken and put over rice

Did y'all know there is also a crockpot thread in the cooking forum - I've gotten some great stuff over there!
 
This is one of our favorites:

Boneless pork chops (4-6)
1 cup of your favorite BBQ Sauce
1 small can of crushed pineapple with the juice.

Place the chops in the crock pot and season with a little salt and pepper, mix the BBQ sauce and pineapple together in a bowl and pour over the chops. Cook on low 5-6 six hours.

Serve over rice. YUMMY!
 
***Note: I use the Crock Pot Roast Sticky Chicken seasonings on my rotissiere chicken, too - it's the best!


Made this the other night and DH adored it:

French Dip Sandwiches

1 4 lb. boneless beef roast
1/2 cup soy sauce
1 beef bouillon cube
1 bay leaf
3 whole black peppercorns
1 tsp. dried rosemary
1 tsp. dried thyme
1 tsp. garlic powder (I used a coupla crushed fresh cloves instead)

Remove visible fat from roast. Combine all ingredients & pour over roast. Add enough water to cover (I added maybe 1 cup red wine, too). Cover, cook on low 10-12 hours until meat is very tender.

Remove & shred meat with fork, serve on french rolls. Strain broth and use for dipping. Yum.

THIS WAS AWESOME!! I did not have enough butter so I added a bit of chicken boullion..I also added a can of mushrooms at the end. I didn't bother melting the butter first...just added everything at once!

I made my pot roast like this only I first poked holes in the roast & stuffed it with fresh garlic (about 10 to 15 holes worth of garlic that is!) Then I rubbed garlic & onion powder all over the roast & then browned it in a bit of olive oil & then placed it in the crock pot with the above listed ingredients. My family is still talking about that pot roast & I made it last week sometime! :teeth: I can't tell you how flavorful it is! It's definitely a meal you could serve to company!

I make yukon gold mashed potatos on the side & serve with the pot roast gravy. (Is there a drooly smile?)
 
We have 2 we make all the time.

BBQ Chicken:
Throw as much chicken in the crock pot as you can, 2 botles of whatever sauce you like, maybe some spices or stuff like liquid smoke, and water. We shred it and make sandwiches.

Chicken Tacos:
3 chicken breasts, water, big can of enchilada sauce, package of taco seasoning. Cook it all day and make soft tacos with it. We take the leftover meat and make enchladas with it, adding beans and rice to strech it out.
