Due to health issues we're not big Coaster riders, and often bypass all but the slowest "guided tour" rides. How severe are the rides at the WWoHP, because to me they all just seem like Roller Coasters. But we want to be sure there are plenty of other things to do there if we go and skip the rides.
:wizard: :stir:

The tamest of the rides at WWoHP is probably Flight of the Hippogriff, a kiddie coaster. You can see all of it before getting on, so you can judge for yourself if it's for you. Dragon Challenge sounds like it is out, and probably Forbidden Journey (the signature attraction) too. FJ is not a coaster, but from your post I don't suggest it for you.

Without those three rides, you can shop, eat, get Butterbeer, do the Ollivander's show, and that's pretty much it.

and go on the castle tour :)

Let me second the castle tour! It's definitely worth it! As you aren't in the line - you can stop and watch each of the little "shows" that happen along the way.
