set dinner menus for Fantasmic Dinner Package?

I was reading on Deb's that they have set menus for the Fantasmic Dinner Package. How strict are they about this.? I am thinking of Mama Melroses but something on the regular menu not listed on the FDP menu appeals to me.
Would they let me substitiute?
Do you think we need to do the Fantasmic Package for a Friday in Oct? (Oct 14)

We have done the FDP at Mama Melrose numerous times and have never had a limited menu. We always order off the regular menu. Although a few people have reported they have been told otherwise, I dont know of anyone who has ever been forced to order from a limited menu.

We have gotten...

A large family style salad (we substituted Caesar once)
Our choice of flatbreads (1 per 4 people)
Any entree off the regular menu
Any dessert(once we had a choice of only 2, so I guess that was somewhat limited )

We have always done the Fantasmic package with Hollywood & Vine. It is a buffet with lots of variety. No menu limitations & lots of yummy desserts. We will be doing H&V again in Oct.
