I can't seem to find specific information on the Sea Raycer rentals. Does anyone know the pricing and schedule?

They are offered at many of the Disney resorts that are located on a lake. On Bay Lake, the Contemporary, Wilderness Lodge, and Fort Wilderness offer them.
You can also connect to Bay Lake from the Seven Seas lagoon if you rent from The Poly or Grand Floridian, which have them as well.

On a different lake, Port Orleans, Old Key West and Downtown Disney offer them on the same lake, and they are also available at Yacht Club / Beach Club, and Coronado Springs on seperate lakes.

Here is a link to another site that has the picture of the rental sign at Wilderness Lodge, which shows the hours at the time and the cost, which was $32 for 30 minutes of $45 for an hour. Usually they are open from the early afternoon until early evening, but not after dark. The pricing is probably the same at all the locations.

I prefer to rent on Bay Lake because there is a lot to explore, and you can see the old Discovery Island and River Country waterpark and cross the water bridge to the Seven Seas Lagoon in front of the Magic Kingdom.

I used a Sea Raycer on the river from Port Orleans. The boat can travel to Downtown Disney, as well as past the tree house villas and other resorts. The only downside here is the boats travel quite a bit slower than on Bay Lake and the Seven Seas Lagoon. This is because the area is smaller and there is more traffic.

The prices are the same at each rental location. Each Sea Raycer can hold up to 2 passengers. I also took a personal watercraft tour of Bay Lake & Seven Seas lagoon this past Tuesday. The 1-hour tour costs about $130 and you get about 15 minutes of free time to play in a large area of the lake. These jet skis (sea doos) travel up to 35mph, and are a lot of fun. The price is a bit steep, but it's well worth it. They can also hold up to 3 people.

Sea Raycers are rented at the various marinas on property. Sammy Duval's handles the personal water craft and parasailing among other activities.
