Schoolbread

Hello

We're returning to the World in December and I am already over excited.

Unfortunately due to our new pup my Parents can't join us. They both loved the Schoolbread last year and I would love to take them some home.

Can we buy it from the Boardwalk Bakery as our AP's expire on the Monday and we don't fly home til the Thursday?

I have never heard that you can buy schoolbread from the Boardwalk Bakery, but then I've never looked.

Not sure I would want to transport anything cream-filled a long distance without keeping it cool though. If you are flying, I am not sure you would be able to bring a pastry filled with that much cream through airport security anyway.

I have only seen schoolbread in Epcot at Norway's bakery. The buttery cream in the middle of it is definitely perishable though!

Recipe
School Bread

Kringla Bakery
Norway Pavilion, Epcot

Ingredients

2 pints water
3 ounces dry yeast
3 1/2 ounces sugar
2 1/2 ounces butter (melted)
1 teaspoon cardamom
2 pounds flour
1 whole egg
8 ounces shredded coconut
12 ounces vanilla custard

Method

Heat water and butter to 95 degrees. Mix flour, sugar, cardamom, yeast, and egg together for five minutes until dough is stiff. Form it like a ball and place in a bowl, cover with plastic wrap and let proof for 45 minutes, or until dough has doubled in size. Roll the dough out like a sausage and cut into five ounce pieces. Roll each piece into a ball and put them on a non-stick sheet pan and let them proof for 30 minutes. Bake for 15 minutes in 375 degree oven. Let cool.

Mix powdered sugar and water (use small amounts until proper consistency is achieved) to make icing and place in shallow pan. Form hole in bread using finger. Dip bread in icing (hole side down) and sprinkle with shredded coconut. Using pastry bag, squeeze vanilla custard inside of hole and swirl at top for decoration.



Vanilla Custard

Ingredients

1 2/3 cups milk
1/4 cup sugar
1/4 teaspoon vanilla extract
4 egg yolks
1 tablespoon corn starch

Method

In heavy saucepan bring milk to a boil. Set aside. In bowl, beat eggs, sugar, and vanilla until the mixture doubles by volume. Add the hot milk a few drops at a time to temper the eggs. Mix well after each addition. Place in metal mixing bowl and place over double boiler. Dissolve cornstarch in a little water and add in a thin stream while stirring constantly until it thickens to proper consistency. It must not boil. Cool by placing pan in ice bath.

We were at Epcot Friday night.. while dd saved our spots for Illuminations, I ran over to Norway for some school bread so we could have a late night munch when we got back to our villa....
WHAT HAPPENED TO THE SCHOOL BREAD??

It's been 2 years since we have been to the World ( ).. but the last time we were here.. the school bread was huge, and really just a 'shell' of bread surrounding mounds of cream. You couldn't just bite into it without it deliciously ooooozing out...
... Now, it's like a donut! Same size, and just a little cream the way a Dunkin Donut's Boston cream donut would be. And, it's cheaper too.. only 1.99. Didn't it used to be $3.50? I can't remember exactly.. but it was disappointing

There is seriously so little cream, I wouldn't worry about transporting it.

OT.. but when we ate at the Yak & Yeti.. we found they no longer serve the noodles with your meal And they no longer have the Udon noodle dish. The server said they never had it, and she had been working there since it was 6 months old. But I have pictures of my daughter eating it! We were there 2 years ago about this time... and they DID have it!

Oooh.. well. Plenty of other thing to enjoy. The Tamarind Chicken was great

I believe the only place to purchase schoolbread is in Norway. Also, I have brought it home on a plane (2 1/2 hour flight) with no problem. I ordered it to go and it was placed in a plastic container. No problems getting it through security - it's not a liquid - and I wasn't really worried about it not being refrigerated. It wasn't that long of a time and my daughter ate it as soon as we got home. She was so surprised when I walked in the door with schoolbread from Norway!

We noticed that last year. It has definitely gotten A LOT smaller. Still good but for us it was a one time experience last year. We used to head back a couple of times on previous trips and use snack credits for School Bread but IMHO it is not worth the effort anymore. We will still get it when we eat lunch at Kringla (love the smoked salmon) but that is it.

Back about 2-3 years ago I went to Disney and brough my sister back a School Bread. It was the real deal (big-honkin') one. I just wrapped it in saran wrap and put it on top of the ice in my ice chest. It kept like that until I got home 8 hours later. It tasted fine.

I agree that the Schoolbread has downsized quite a bit from the "old days". I haven't had the new version, but the old one barely fit on the plate. This new version has room for a friend!

Y & Y used to serve Pho noodles. Are you talking noodle soup? Because they never served Udon noodle soup (like you can get at the Yakitori House in EPCOT), but they did serve Pho in the early days. I just looked at the menu and it is no longer listed. Udon is fat white noodles, Pho is thinner and usually not white.
