Things like air boats/zip lining, etc.....any where that has deals? Our boys aren't excited about disney and I'm trying to find extra awesome things to do on our non park days that aren't $900 for the 5 of us, lol.
Drive to the beach. Atlantic shore near Cocoa Beach is closer, Gulf coast is also nice. You can pack a lunch or eat at a McDonalds or whatever. On the Atlantic side the surf is usually pretty big, so you can buy inexpensive boogie boards and ride the waves.
Visit various WDW resorts, whose lobbies and grounds are nice for taking pictures, sitting around in the lobby, walking around the grounds, etc. The restaurants are great, or you can save money by eating at their quick-service counters. If you drive to the resorts and say you are going there to eat they will give you a free parking permit good for 3 or 4 hours. Not "exciting" but a nice relaxing day off from the parks.
If you're nature lovers, there are also various state parks and nature preserves that you can visit. Some of them have swimming etc. We've never done this, but I heard there is a nice state park where you can float down a spring-fed river, and also there is a WDW nature reserve with a hiking trail.
