Sausage cheese balls

Bump.. Wanted to revive this thread for those who are looking for something quick and easy to make for Christmas morning.
I made this for the first time last Christmas and they were a big hit.
 

Interesting timing! I have some in the oven as we speak for church in the morning.

As for what to serve with them on Christmas morning, that's tough for me. I typically see these as a party dish/appetizer type food, not really a breakfast food, although there's no reason they can't be for breakfast. I'd do a bag of hash browns, maybe? Possibly a bowl of mixed fruit, like bananas, raspberries, blueberries, and strawberries.

You CAN make the sausage balls the night before. I like to serve them room temperature.

I wonder if any other type of cheese could be used. Has anyone ever used anything except the sharp cheddar in this recipe?

Use whatever you want! I just think they're best with sharp cheddar. I've done 4 cheese blends and mild cheddar before.

Saw this thread pop up today and looking it through it I realized I never came back and posted my recipe. I just happened to have it with me today so here it is.

Sausage Cheese Balls
1 pound of sausage (I like Jimmy Dean or Tennessee Pride)
2 cups Bisquick
1 cup grated cheddar cheese (I add extra, usually about 2 cups)
1/2 cup water

Preheat oven to 450 degrees
Scramble sausage until lightly brown
Drain grease
Add Bisquick, cheese and water
Mix well
Form into small balls
Place on a cookie sheet and bake 12 - 15 minutes

Enjoy!

Sausage balls aren't a particular favorite of mine -- I don't know that I've ever prepared them myself -- but my mother used to make them for Christmas morning when we were kids. I am 100% certain that she prepared them ahead of time IN BULK and froze them.

I don't know if she cooked them prior to freezing, or if she froze them raw.
 
I love sausage and cheese balls! My mom and I both always make them about a week before Christmas and the family eats them for breakfast or a snack throughout the week. They keep very well in the refrigerator.

This is my variation:

1 lb. Bass sausage
8 oz. sharp cheddar cheese
2 cups Bisquick
Splashes of milk as needed

Mix well and roll into balls. Place on a parchment paper lined baking sheet and bake on 350 for 10-20 minutes, depending on size. They have deep golden brown spots and be sizzling when they're ready.

When a kid, my mom would make something like that around the holidays. Delicious! We would place what wasn't eaten into the freezer and eat it for snack food for a week or so.

That's why I asked about the sharp cheddar - it gives me migraines as well.

I made these last night using a Colby Jack mix and they turned out SO yummy! DH rolled them out and made them the size of ping pong balls which I think was a bit too big. We are making another batch tomorrow morning and I am going to make them just a little bit smaller.
 
I just put a batch in the oven. DH's mom won't let me bring anything for Christmas dinner other than green bean casserole, so I made some so they can just sit out as we get ready for the big meal.
