There was an article in my paper this morning about Crystal Cruise Line and their anti Norwalk measures. Each ship has a designated Sanitation Officer that trains all employees about sanitary procedures, safe food handling etc. The article said sanitizer dispensers are used before boarding at all ports and are located all over the ship. For buffets, the staff serves the food. Even the nut bowels are gone and you receive your own personal nut supply in a white china vase container!! I think this is all routine - not just during an outbreak. They talk about employees and passengers with Norwalk symptoms kept to their room for 72 hours.
 
You'll find similiar measures onboard a disney cruise. There were sanitizer dispenses at the front of every dining place and before you got back on board. I also believe that it's something that is stressed in the kids club based on this short conversation I overheard between a 7 year old and his father where the dad asked the kid what he was doing as he started to walk away and the kid said, "I'm sanitizing."
 
I was on the Magic in 12/02 - shortly after cruise that was cancelled due to Norwalk. Not only were the hand sanitizers out but the buffets were also no longer self serve. We couldn't even dispense our own salt, pepper, condiments - it was really strange and hard to get used to. Disney takes sanitation very seriously.
