We usually don't care much for the other offerings at ABC commissary in HS, but the asian salad there is one of our favs. It is very crispy and crunchy with a sesame dressing.
Roasted Beets and Goat Cheese Salad - with Honey Sherry dressing @ Sunshine Seasons in Epcot.
Also had a FABULOUS Anitpasto Salad (which appears to be a new addition to the menu) at Pizzafari.
I really enjoy the Wilderness salad at Roaring Forks at WL. It has chicken breast, candied walnuts, apples, and cheese tossed in an apple dressing. Can't wait to have one on the next trip.

I love that salad too! I also love the Saratoga Springs salad at SSR - it has grilled chicken, cranberries, blueberries, candied walnuts, lemon poppyseed dressing- sooooo good!
Flame Tree Barbeque (AK) has a good barbeque chicken salad salad. Columbia Harbour House (MK) used to have a good salad with chicken and gorganzola cheese but I don't know if they still have it or not.
Music and Movies has a create your own with either grilled chicken, steak or salmon. PM has a Chef Salad. I hate that it's so hard to find a non Caesar salad in the parks. Some of us have allergies to the parm cheese. What I like about AllStars and CS salads is the dressing us not Kens. AS has a nice white balsamic vinegarette and PM had a nice blue cheese.
Cobb Salad at Grand Floridian Cafe (IMO better than the Brown Derby)
Beet and Goat Cheese Salad at Sunshine Seasons
Caesar Salad at Turf Club (they slightly grill the romaine lettuce and it's quite interesting)
DHS has an awesome salad at Fairfax Fare (shredded smoked pork, roasted corn, pico de gallo, shredded cheese, tomatoes, & lettuce). I also love the taco salad & toppings bar at Pecos Bill. Plus, I'm not sure where you're staying, but most of the All Star's have a great create-your-own salad w/ lots of different options.

Pinocchio Village Haus used to have a very good antipasto salad, but now they have only a chicken caesar salad. Liberty Inn (Epcot) used to have a southwestern salad that I enjoyed. Once again - now they have only a boring chicken caesar!
