I have booked a room at PBH for 4 people but two of them may not be able to make, although we probably won't know until we are really there. If only two of us check in will PBH refund the extra $50 for the two that don't check in or not?

Can you remove them from your ressie now and add them back on at check-in if they show?

I have booked a room that will take up to 5 and have listed it as being 4, would they do that ok if I were to change to 2 then add the extra two abck on if they made it?

I can't see why not. If it was a WDW resort and their dining plan it would be a different matter as the DP and all guests have to be added to the reservation in advance. Why don't you call reservations and ask to have them removed and inquire if they could be added at check in if they do decide to come afterall. You are not over your room occupancy so you should not have any problems. In fact, I have added my niece to a room mid-stay when she drove up from Tampa. I was simply billed the $25 when I got her room key card.
