Room booking for Escape wedding

I understand that I have to pay for 4 nights in a Disney hotel as part of the Escape package but need to check a couple of details...

I assume the Swan and Dolphin doesn't count?
Do the 4 nights have to be consecutive or can we stay 2 nights during the wedding and 2 when we get back from our cruise? No family will be staying on site as they are renting villas so it's down to us to use the rooms.

The swan and dolphin does not count (were staying there the first 5 nights) and our planner was fine with us splitting the reservation before and after a cruise too - hope this helps!

That's great, thank you for letting me know! That definitely helps a lot as it suits our plans so much better to split the stay.

Got a couple more questions about rooms-can we book them by any means? For example, when free dining offer is on or if there is a discount on the room, such as the recent 40% off? Also, as I understand it I have to make the room reservation before we book the wedding? If I do this for the dates we would like and then can't have our wedding on that day, is it quite easy to change the room booking?

Yes you can book the rooms through any means. Yes you need to book them before you sign your LOA, but you can wait to see if you get your date then immediately book the rooms. Depending how you book would depend how easy it would be to move the dates.

As claire says you can book room only and if it has a cancellation policy cancel it later on if you find a better deal (such as when the annual pass rates are released). I have 2 nights booked through renting dvc points, and another two through expedia as the price was cheaper than Disney uk or usa, both are on my loa with the booking references.
