Right now there are no room types available as GF for early December. Does Disney ever keep some reservations held back and release closer to date? Or will it just be a matter of rechecking to see if someone cancels?

They don't really hold rooms back in the sense you are referring to. They offer available inventory. It doesn't really serve any purpose to just hold rooms back for no reason
Sometimes blocks can be held for something like a wedding or other event, not just individual guests have them booked
A matter of rechecking to see if someone cancels or if blocks are returned to inventory and available for booking
So yes, bottom line is, availability opens up all the time. I check multiple times a day if I am after a specific resort especially during a specific promotion.

I kinda thought as much. Never hurts to ask a Disney expert though!! Thank you. I’ll keep checking like a maniac! 🤞

Try on incognito mode. For some reason I could see availability when I did that that wasn't there in my regular browser.

Have you tried making a reservation for more nights than you need? Often you can then call Disney reservations and request removal of the nights that you do not need from your reservation.

This. ^^^ I've seen minimum lengths of stay longer than 7 nights for our October dates.

You could do a confirmed DVC reservation at a broker. Should be plenty of those after the new building opened.
