I'm so sorry I missed this thread! Did you ever get a new "cooker"? (Sorry, but the term makes me giggle because it always makes me think of a person who cooks instead of the stove/range/oven.)
I sure hope you're not still eating "jacket potatoes"!

I'm afraid I wouldn't be of much help with this since I tend to make only packaged things in the microwave - well, besides re-heating leftovers & frozen veggies. I don't think of it as the main source for preparing meals.
The one thing that comes immediately to mind calls for prepared ingredients.
Cheez-Its
Taco Seasoning
I'm not sure about substituting for the Cheez-Its if they aren't available to you. If you have ANY sort of cheese snack cracker available to you there it they'd work. Or maybe you could just bread crumbs (Can you get those in a can there?) & just add some grated Parmesan cheese...again from a can though. If you grate it yourself, it tends to be larger pieces & I think that would give a different consistency & tend to clump. I'd definitely use WAY less bread crumbs than smashed crackers though.
Anyway, this is really good!
Cheez-Its Chicken
2 - 3 c Cheez-Its, finely crushed
1 pkg taco seasoning
4 chicken breasts, boneless
Put Cheez-Its in a gallon-sized bag & seal removing as much air as possible. Using a rolling pin or the side of a meat mallet, crush the crackers. Pour crushed crackers into a bowl & add the dry taco seasoning. Mix until seasoning is evenly distributed. Dredge chicken in cracker mixture & place in a microwave safe dish. If there is any cracker mix left, pour it evenly over the chicken in the dish. Cover with plastic wrap & microwave until done.
Oh - and if you can't get the seasoning, this would work.
Taco Seasoning Mix Recipe
Serves/Makes: .5 cup
6 teaspoons chili powder
5 teaspoons paprika
4 1/2 teaspoons cumin
3 teaspoons onion powder
2 1/2 teaspoons garlic powder
1/8 teaspoon cayenne pepper
In storage container with tight fitting lid, combine all ingredients; mix well. Seal tightly. Store in cool, dry place for up to 6 months.
Seven teaspoons of mix equal a 1.25 ounce pkg. of purchased taco-seasoning mix.
