The only simulator attractions with no tracks I can think of at Universal are Despicable Me and Simpson. If you stretch it, maybe Shrek. But I consider it more 4D movie. When most people complain about simulators at Universal they are track based simulator where you are in a moving car that moves from screen to screen with real sets and sometimes animatronics in between. In that genre of ride you have Spiderman, Transformers, Forbidden Journey, Gringotts, and Kong.
Universal doesn't have any simulator similar to Star Tours or Mission Space. In most of them, you are looking at a bigger screen. In the case of Simpsons, the Screen is as big as Soarin's. They are all unique and fun. But, I do take Dramamine which I normally don't need to do for roller coasters.
