We're taking my dd and her 2 children in May. Grandson is almost 3 and granddaughter is 18 months and very tiny. Will she be able to go on rides like teacups, dumbo and buzz light year sitting with us?
 
Yes, at other parks it's different, but there are way more rides without height restrictions than with them at MK

Little Mermaid
Jungle Cruise
Astro Orbitor

At AK we mainly look at the different animal exhibits, see shows, the parade

At Epcot we mainly look at the interactive exibits.

Finding Nemo
Living with the Land
Journey into Imagination with Figment
Spaceship earth I think

At Hollywood Studios we mainly see shows (Disney Junior, Little Mermaid, Beauty and the Beast, Muppet Vision 3D) and meet characters. There are other shows though.

they love to ride Toy Story Mania

Since you're going when it is warm, bring extra clothes and maybe a towel to MK and Epcot. Both parks have splash pads and my children love them.
 
My DD was 15 months when we went in October, and she was able to ride most of the rides. Her favorites by far were "It's a Small World" at MK and Kilamanjaro Safaris at AK. Being able to enjoy rides as a family was a wonderful part of the trip!
