Ribs?

Thanks everyone! We've had the Flame Tree BBQ ribs and I agree they are very good. Maybe I can talk her into those and we can do something different for a table service.

For TS ribs Big River Grille at the BW are excellent. If there's any food I know something about it's smoked meat, check my sig...!

I had the ribs at Yak & Yeti and they were fabulous - tons of fall off the bone meat with a nice, sweet sauce that had a kick to it.:thumbsup2

Ummm, if the meat "falls off the bone", they're overcooked.

Question for me is if ANY Disney restaurant, TS or CS cooks true BBQ meaning wood fired slow cooked and smoked?

Flame Tree always gets high ranks. I don't believe they have any such smoker present. To me it tasted like boiled ribs with bottled BBQ sauce poured on.

So, is there any wood smoked BBQ in Disney?
 
FWIW, there are three different types of ribs up for debate here:

Short ribs, which are beef and cut from the plate primal. Cooked correctly, they are absolutely delicious and tender. They are becoming increasingly rare at WDW (I just read that Jiko took them off the menu) but fantastic if you can find them.

Most of the restaurant at WDW serve St. Louis style pork ribs, which is a specifically trimmed spare rib. Many BBQ snobs feel they are inferior to the baby back (the third style), but cooked correctly, I actually prefer them. They tend to be much leaner and meatier than baby back ribs, but can be unbelievably tough if cooked too quickly or at too high of a temperature. They are much less expensive than baby back ribs (up to $1.00 less per pound), hence their usage at many places.

Baby back ribs are cut from the top of the rack, between the spine and spare ribs, and are generally agreed to be more tender and more fatty.

You can tell the difference between St. Louis ribs and baby back ribs because a St. Louis rib will lie flat, while a baby back rib has a pronounced curvature. Taste wise, it's a personal preference.

All I can add to the actual conversation about the best ribs at WDW is that, in my opinion, they cannot possibly be at WCC. I found the ribs there (St. Louis style) to be tough and greasy. The quantity could not make up for the lack of quality in my mind.

I suspect they use an electric style smoker that burns chips. I also suspect that all the St. Louis ribs are prepped at a central kitchen. I have no proof of that, but given the time involved and their penchant for centralized kitchens, it makes sense to me. There is some smoke flavor, but keep in mind that it's BBQ for the masses, and not competition-style BBQ.

I am also 99% certain that WCC uses a pre-prepped brisket that they reheat on site. Given their inability to execute all of the other BBQ'd meats, I am deeply suspicious of the perfect smoke ring and fantastic tenderness present in the sliced brisket.

Personally, I don't really care if they are over cooked or not, as long as they aren't tough and taste great. Y & Y is the only place in WDW that I didn't get tough greasy ribs.
 
I never would have guessed it, but Cape May had some of the best ribs I've ever eaten. They were tender, moist, & really flavorful. I would be willing to go there for dinner again just for the ribs (& desserts). I also like the ribs at Whispering Canyon (with an extra side of their delicious bbq sauce to make them really wet).

Wilderness Lodge does have a smoke house on the back of the property. Haven't had their brisket and not sure where it's smoked but they may do it themselves.

The smoke ring is easy to do, perfect tenderness takes practice but I'm sure their chefs have the experience. I only do 4 - 6 briskets a year so it took me a while to get it right.

I've had so many BAD ribs over the years I quit ordering them when we went out. We stayed at a Holiday Inn 5 - 6 years ago on the way to WDW and I ordered ribs in the restaurant there. When I bit into the first one the bone crumbled in my mouth, that was the last straw.

The ribs in the platter at WCC were tough and greasy this month. I also didn't care for the ribs at Flame Tree last year, either...super tough (blasphemy, I know). The ribs at Y & Y were fantastics earlier this month.:thumbsup2
 
Planet Hollywood ribs in Downtown Disney are SOOO GOOOD! And dont forget Magic Kingdom has ribs too if your eating in tomorrowland, and they are Counter Service!!!!!
 
My DH LOVES the ribs at Yak & Yeti in AK. I like the food there too and we go every time we are there.
 
1. Cape May, which is great because there are so many other choices, but the ribs are very tasty.
2. Trail's End at Fort Wilderness. Same ribs as Hoop-De-Doo and great grilled chicken, too.
 
I love Cosmic Rays ribs; I haven't been able to find ribs at a TS that I have tried yet.

I will say avoid the ribs in DHS at the counter service locations, they were so bad earlier this year we actually threw them away.
