Rib Roast for Christmas Dinner.

And I am making JennyMominRI's recipe!
 
Here ya go.
If you remember, it's not a real recipe.
IN a small bowl I mix about
2 Tbsp's olive oil
1 Tbs garlic
1 tsp worchestershire sauce
1 Tbsp horseradish
1 tsp kosher salt
1/2 tsp black pepper
1 tsp dijon mustard.
Rub all over the roast(Roast should go in the oven at room temp, for even cooking)
. Bake at 400 for about 20 minutes until it gets a little crispy and then turn oven down to 225..You will want an oven thermometer to cook it to desired temp,but slow cooking really makes a difference in taste.
What I do is have the roast cradled (the bones removed and tied back on), cook it at 500 degrees, 15 minutes per rib, turn off the oven and do NOT open the door, no matter what, for 2 hours. It will come out medium rare. It works every time.
 
We're having a chuck roast for dinner. Turkey may be a more modern Christmas meal, but I sure love cow.

Long ago, our butcher gave us a similar recipe - the cook for a hour, turn off oven, but he had the last hour with the oven turned on. It always worked perfectly.

But I recently lost the recipe and couldn't remember the temps, so was just going to use a meat thermometer for rare.
