Return Flight?

When would it be safe to book a return flight out of MCO? FYI...we are travelling with three kids (one baby) and planning to rent a car from Budget.

DCL recommends flights after 12:00, but people on dis have done 11:00 w/no problems. With 3 kids, I would look for something after 12:00...
