Restaurants and Allergies

Hope I'm posted in the right spot. I have allergy to both mushrooms and nitrates. Been to Disney a couple of times before so the mushroom one the Chef's are good about, its the nitrate one that throws most of them off.
I've made all of my ADR's. However the lady on the phone didn't want to add my allergies,stating it wouldn't do any good. When I asked for an email or phone number she refused. Telling me to just to tell each restaurant. Is this proper procedure? In the past its always been included on my ADR's

Guests with requests associated with the list below should contact the Walt Disney World Resort at SpecialDiets@DisneyWorld.com at least 14 days prior to arrival and after booking all dining arrangements for the entire visit:
Allergy or intolerance not listed above under Common Food Allergies
PKU
Metabolic disorders
A single guest with multiple allergies/intolerances or multiple guests with allergies/intolerances within the same party

I would say send special diets an e-mail and see what they say or what they can do. This is probably the best place to start.
