I'm going to Disney World with my dad in November, and I've been researching restaurants for each of our days. We're doing counter service restaurants for lunch and table service for dinner. Breakfasts will not be had at Disney to save money. We can only go to 3 signature restaurants, and we have chosen them already (please don't waste time trying to convince me to change them-- I'm very excited about them). We also want full days in the parks, and don't want to leave the parks to go to resort restaurants. Not sure if certain restaurants will open by the time we go, I think they might open more stuff up for the 50th Anniversary.
Our current choices are:

Magic Kingdom:
Lunch: undecided quick service
Dinner: Cinderella's Royal Table

Animal Kingdom:
Lunch: undecided quick service
Dinner: Tiffins

Disney Springs:
Lunch: undecided quick service
Dinner: Morimoto Asia

Epcot:
Lunch: undecided quick service
Dinner: undecided table service
 
For Epcot our TS favorites are Coral Reef, Chefs de France, Tutto Italia, and Le Cellier. I know you said CS for lunch but at AK the Rainforest Cafe has a nice variety and not sure if it costs that much more than the quick service places.

MK quick service: I rarely eat at this park but you can have a freshly made meal at Sleepy Hallow.

AK quick service: Many rave about Flaming Tree which has a large plate of roast chicken big enough to share.

DS quick service: We bought chicken nuggets/strips at Chicken Guy for the kids to eat on the plane ride back home (their request). I tasted one and it was surprisingly good even at room temperature. There’s always the Earl of Sandwich as well.

EPCOT quick and table service: This is the park with the best overall food, IMO. I’d just pick a cuisine you like and go for it.

My only suggestions given the fact you are traveling with your father is to avoid the following eateries for a variety of reasons:
Teppan Edo- many children thus high noise volume and a menu that caters to picky eaters. Tokyo Dining and the Japan Pavilion QS are much better.

Regal Eagle- if you hold a special place in your heart for BBQ don’t do it as you will probably be disappointed. Wet, sweet red sauce seems to be their favorite seasoning.

Nice choice of signatures; I think you’ll be happy with them.

For MK lunch, our family would do Peco's Bills or Columbia Harbour House... if you want a table service for lunch, that isn't too expensive then try Skipper's Canteen... we LOVE that one.
For AK lunch, Satuli is our family's favourite... my DH loves the Flametree BBQ. Tiffins is one of our top 5 restaurants on property. We love it there. Good choice.
For DS lunch, I don't have much to contribute as we rarely go there... We really want to try Morimoto. That will probably be on our February trip.
For EP lunch, that is tricky as there are so many interesting places to eat. We always struggle with this one too. Usually we just graze around the world as there is usually a festival on with booths of foods to try. If not, our go to would be the France QS. Dinner TS we always do Coral Reef and Chefs de France every trip. We have also tried the Moroccan and German TS restaurants but they were meh to us.

For MK QS we like Pecos Bill for a "healthier" option, especially with the additional veggie toppings you can add into your meals but I'm also partial to some loaded tots from Friars Nook or a hotdog from Casey's Corner.

For AK it has to be Satu'li canteen for me. Those protein bowls are great and so customisable.

For DS we like the daily poutine as a good and filling QS option and I hope they keep the Korean version around for a while so I can try it on our next trip.

For Epcot, QS wise we love Les Halles for a croque monsieur or french baguette (and a crème brulee for DH). We also loved the platters at Tangerine Cafe on our last trip but not sure when this is going to re-open. Table service wise, DH loves Biergarten and Via Napoli and I like Chefs de France.

At the MK we usually either go to Columbia Harbor House or Casey’s - so Casey’s would be my choice since CHH hasn’t reopened. I also love the waffles from Sleepy Hallow.

at AK -i Would get ahi tuna nachos from Yak & Yeti. They aren’t QS but they are one of my favorite dishes on property, are enormous and we share them with an order of egg rolls and it winds up being similar in cost to QS.

DS - polite pig or daily poutine

Epcot - I almost never get lunch because there is almost always a festival going on and I just eat from booths. Even when I have been during non-festival times I tend to just snack and pick things up around the world - a pretzel in Germany, something buttery and cheesey in France, a small order of fish & chips we share from the window in England etc.

The new Space restaurant is projected to open in October so that would be my choice for TS because I’m super excited about it.
 
Thank you all so much, I really appreciate it! Picking restaurants is always so hard but it's also the most fun. Choosing a restaurant for Epcot is especially hard because all the options seem so sparkly and tempting. I appreciate everyone being so kind.

I have been to Tangerine Cafe in the past and I really loved it, it was a favorite. My dad is a bit pickier of an eater than I am though, and may not be as huge on Moroccan. I might be able to go there again on a later trip though. I hope it reopens soon!

I've also been to Les Halles and absolutely love it. All those treats! It's heavenly.
 
QS at MK is tricky, there really isn't a lot of good choices there so we tend to just graze getting snacks here and there. When we do eat QS there, it's Pecos Bills because the servings are huge and easy to share. I can't comment on Cinderella's Table. We have been going to DS for over 35 years and have never eaten there. I have a son (adult now) and princess meals weren't really his thing. We try to avoid any character meals now because we like a nice quiet meal.

AK, again we rarely eat QS there, we love Nomad Lounge (which is attached to Tiffins) so we tend to go there and get some small plates. Most people love Satu'li but I'm not a fan, I do sometimes grab something from Yak and Yeti QS. Tiffins is a great choice and one of our favs.

DS, can't help you as we have never been and probably never will. Getting there from the resorts is a pain, for some the reason the buses there are the worst. We do all our shopping and eating in the parks and resorts.

Epcot, our favorite park by far. You really can't go wrong with any of the QS spots in World Showcase. Like others, we tend to be there during a festival and graze around on the booths. Dinner - again you really can't go wrong at just about any of the countries. We haven't eaten at Germany because it was buffet before and I don't eat a buffet's, it's a waste of money as I'm not a huge meal eater. Our favorite is probably Spice Road Tables, they have cut down the menu to just small plates right now, I don't know if they will be going back to a full menu some time in the future. We always just got the small plates any way and shared.

HS ABC Commisary has great variety now or Ronto Roasters
Epcot Qs Mexico outdoor place don’t remember name
Epcot TS pick what food you like almost everything is good there

Lunch: undecided quick service Never eaten QS there so I'll defer to others.

Epcot:
Lunch: undecided quick service Tangerine Cafe if it reopens by then. Les Hales and many more as most have stated.

I have a different take on this one. You are basically eating French food at CRT, Tiffins will be a bit different flavor profile, but still has continental leanings as well. Morimoto will be a nice change of pace and is very good. Ultimately our favorite restaurant at EPCOT is San Angel Inn not based solely on the food being the best, but often times because WDW restaurants lean on French and Continental so heavily that we just want something different. IOO it is the best restaurant atmosphere in EPCOT and we do enjoy the food. (Keeping in mind it's Mexican food like in Mexico, not Tex-Mex.) If you don't mind waiting a bit ask for a water view table if possible or maybe as close as they can seat you to the water. With all the varieties of food, I simply don't go for "the best restaurant". It ultimately comes down to what you are in the mood for. We spend 10 - 12 days in WDW typically, so we have learned to spread the wealth when it comes to various types of food from day to day.

If you want another signature, Le Cellier is excellent. We've had mediocre meals there in the past and, I don't know what happened post-covid, but we went in mid-June and the food was outstanding. Chefs de France was also excellent - beautiful restaurant, lovely service, very good food.
 
My votes:

MK....I would leave the park at lunch and take the boat to WL and eat on the waterfront at Geyser Point.

AK...Harambe Market or Satu'li Canteen and my opinion of Tiffins is that it has one of the loveliest decors in WDW.

DS...Chicken Guy or D-Luxe Burger

EP.....I assume you will be there during Food and Wine...so definitely hit one or more of the special kiosks. Sit down....Chefs de France or I also like La Hacienda de San Angel if only for the decor and view if you snag a window table.

There are so many great suggestions and I really appreciate everyone’s feedback. I was wondering if Tokyo Dining or Teppen Edo was anyone’s favorite? Or if anyone likes the Japanese quick services for lunch?
 
Also of Morimoto Asia, Cinderella's Royal Table, and Tiffin's which is hardest to get reservations for? I feel like it's Cinderella's Royal Table, but maybe they're all difficult to get reservations for since they're signatures? In all honesty we've never made reservations before. We'd usually just eat at the park with no reservations.

We're going to Magic Kingdom November 8th, Animal Kingdom November 9th, Disney Springs November 10th, and Epcot November 11th.

I know it's not currently open, but I've always liked the idea of Restaurant Marrakesh because of the bellydancers, has anyone been there? I probably won't go with my dad, but I may go with my boyfriend there a year or so from now. If it reopened would they get rid of the bellydancers?
 
We’ve eaten at Teppan when in the mood for the cuisine and it was just solid in my opinion.

in terms of reservation difficulty, I would book CRT first , Tiffin’s second.
